Pampering the riders of the Polar Express.

A train ride to the North Pole + your favorite fetching jammies + hot chocolate and homemade holiday sugar cookies = what? 

Bliss!

Every year, the Polar Express rolls into White River Junction, Vermont, where passengers are treated to a ride to visit the Big Elf himself. (Pajamas and fuzzy slippers totally encouraged.) This year, the 10-year anniversary, the magic ride is sold out and the waiting list closed. But it’s never too early to put on the to-do list for next year. In the meantime, being foodie types, we’d like to give a shoutout to the bakers who help make the trip so sweet.

Early on Sunday morning, December 4, folks at the Co-op Commissary Kitchen and White River Junction Rotary Club decorated and baked more than 3,000 of the legendary Polar Express holiday sugar cookies. Working together, they mixed multiple 40-pound batches of dough and scooped thousands of 1-ounce cookies by hand.

That comes out to:

65 pounds of King Arthur Flour
53 pounds of sugar
37 pounds of Cabot butter
17 cups of eggs
1 cup of baking soda
25 tablespoons of baking powder
1 cup of vanilla
